Because it's a calf! This is the excellent Market Day sculpture in Ballyhaunis which I know about as you have featured it in your equally excellent Blog before!
Halal meat factory and Halal meat packers in late 1970s boosted the previously non-existent Muslim population of Ballyhaunis enormously. While they closed in 1992 a lot of the people had become settled and so there is a strong Muslim presence there today, including a Mosque.
As the town has more or less adopted that sculpture as its online logo a pig would have been most inappropriate.
